Treat you kids this fall with this easy to make and bake coffee cake.
I made these one Christmas and gave them in see through top pie boxes with gourmet coffee and mugs. I added holiday morsels and white chocolate chip on the top and drizzled with sugar glaze.
It was there breakfast for Christmas morning. That way my family did not have to prepare breakfast and could enjoy their present as they celebrated their time with family!
1/3 cup of biscuit mix (you can use homemade biscuit mix)
1/3 cup packed light brown sugar
1/2 tsp organic cinnamon
2 tablespoons of cold butter
2 cups of biscuit mix
2/3 cups whole milk
2 tablespoons white sugar
1 teaspoon vanilla extract
a sprinkle of cinnamon
1 cup of confectioner's sugar
2 tablespoons milk
Preheat your oven to 3.75 degrees F. Spray 9 inch round cake pan with cooking spray. In small bowl mix streusel ingredients together and cut with a pastry cutter or fork. Set aside.
In large bowl mix cake batter ingredients together with a spoon and pour into prepared pan. Top with crumbly streusel topping. Bake for 18-20 mins or until a toothpick comes out clean when you stick it into the center of the cake. Cook 10 minutes.
Mix with spoon confectioner's sugar and milk, you may add a little milk to make smoother. You want it to be thick enough to drizzle over your coffee cake.
Decorating the coffee cake once cooled a bit. ( I leave mine a little bit warm)
Add your toppings, candies, fruit, chocolate candies, holiday candies, nuts or anything that your family prefers. Then drizzle on the glaze. Serve with coffee, hot chocolate, or tea.
Yields 10 servings.
I store mine in glass cake with dome.
