We love fruit! I must tell you that we love it even more when it is orchard fresh!
We have a small orchard on our 1 acre piece of land, it is not large but the yield is perfect for our family!
This week was blueberries!
Our children are home schooled. They helped plant, harvest, and bake or prepare the blueberries.
It is good for kids to learn where foods come from. They need to learn the process from seed to tummy!
They are great in yogurt, oatmeal, or just plain in a bowl.
My favorite way to eat them are in warm, soft, out of the oven blueberry muffins.
Children need a certain amount of blue/purple foods.
So do you!
I bake ours in silicone cups for easy clean-up.
I spray our cups with a little cooking spray.
Serve warm with a little butter and a cup of milk.
Recipe:
2 cups of Bisquick ( we use Heart Smart)
2 tablespoons vegetable oil
2/3 cups of milk
1/3 cups of sugar
1 egg
3/4 cup of fresh/frozen blueberries
Mix first 5 ingredients together in bowl, fold in fresh orchard berries.
FOR BEST BAKING RESULTS
I do not use paper muffin cups.
Place batter in parchment paper lined muffin tins (cut into small circles), or greased silicone cups.
Fill 2/3 with batter.
Bake 400 for 13-18 or until golden brown.
Yields 12
