Baked Cheesy Zita & Sausage with Vegetables.


OK, our house smells so good right now, if I did not know better I would think that I am in a restaurant waiting to be seated!

I am going to give you this recipe under one condition.... you share it with everyone you know. ha ha
and give me a shout out in the comments section at the bottom of this post.

OK, here we go.(this is a simple recipe and my kids prepared most of it)

What you will need:

2 large cans 28oz of crushed tomato
1 can tomato paste
1 1/2 to 2 pounds of sausage 
1 green pepper sliced in rings
1 yellow pepper sliced in rings
a hand full of cherry tomatoes sliced in half
 3 teaspoons of Italian seasoning 
 1 teaspoon of Garlic powder 
minced onion 1 tablespoon
3 tsp of salt (2 for the boiling water)
1 pepper
2 cups or mozzarella cheese
1 large box of Zita whole grain noodles 

What you will do:

Preheat Oven to 350 degrees.
Boil a large pot of water with 2 tsp of salt, this will allow Zita pasta to have flavor.
Next in a large kettle, I use a coated cast iron one. You will brown the sausage until crumbly.
While it is browning add noodles to boiling water.
Once sausage is brown do not drain unless really greasy. I like a little grease for flavor.
In the large kettle: all in the same pot right on top of the sausage,

Add crushed tomato, tomato paste, 1 teaspoon garlic powder, 2 teaspoons of Italian Seasoning, minced onion, the cooked pasta. I mix it all up and then add a cup of cheese and blend. Add sliced peppers and tomatoes on top, sprinkle with the rest of the Italian Seasoning and the remainder of the cheese. Bake at 350 degrees for 30 minutes until cheese is melted and it is brown on top.
Other than the pastas pot this is a one dish meal. And it feeds a large family! With leftover.
Yields 10+ servings!
