Easy & Quick Homemade Chicken & Dumplings

Homemade Chicken & Dumplings




You will need:

4-5 chicken breast or thighs (boneless)
5-6 chicken bouillon cubes
 Bisquick Heart Healthy Mix
Milk (I use 2%)
salt and pepper to taste



First:
Boil your chicken in a large kettle or pot.
Add chicken bouillon cubes while cooking.
Boil until cooked through and check with thermometer.
This should take about 20 mins or less.



Second:
Once chicken is done remove from broth.
You will want to shred your chicken and add it back to your broth.



Third:
In a large bowl add 1 1/2 cups of Bisquick Heart Healthy Mix to 1/2 cup of water. This will make a sticky dough.
Third: Drop the dough into broth by using two spoons. Scoop dough onto one spoon and scoop off with other into the boiling broth.
Dumplings will rise and float while cooking (DO NOT STIR THEM)
Once the top of broth is covered with them let them boil until done, about 10 mins or so.







Enjoy!
Salt and Pepper to taste. You can increase the amount of dumplings by making more and adding to broth after a couple of bowls are gone out of 1st pot. I make about three batches.
This is why I did not include the amounts of milk and Bisquick in the ingredients list. By a box of mix and a half gallon or so of milk and make what will feed your family. Yes I sometimes have two pots going at one time here at the farmhouse. 
They are great the next day!
They do not freeze well.
